Lesson 03: Pan heat, oil, and browning

Lesson objectives:

  • Preheat a pan dry, then read the two visual cues that say the oil is ready.
  • Use the hot-pan-cold-oil sequence to keep food from sticking in an ordinary pan.
  • Name what browning is (the Maillard reaction) and the heat range where it happens, and use that to explain pale or burnt results.

Pale and soggy at medium, smoking and stuck at high — where is the setting in between?

The stove has numbers on the dial, and none of them are the number you need. Cook on timid heat and food stews in its own moisture: pale, soggy, stuck to the pan. Panic the dial upward and the oil smokes while the outside chars over a raw inside. The missing information is not a dial setting — every stove and pan pair differently — it is a pair of cues you can see, plus one piece of chemistry that explains what the heat is for. This lesson gives you both.

Explanation

Preheat the pan empty, and dry

Heat the empty pan first, before any oil. This is the first half of a technique with a name in Chinese home cooking: 热锅凉油 — hot pan, cold oil. Heat the dry pan until it is thoroughly hot, then pour in cold oil and swirl to coat; the oil heats in seconds against the hot metal, and food added then releases from the surface far more readily than food added to a cold pan that crept up to temperature1.

Dry is not decoration. Before oil goes in, the pan interior must have no residual water: water under hot oil flashes to steam and throws oil out of the pan at you1. Wipe a just-washed pan before it goes on the burner. The same rule extends to food — surface-wet ingredients spatter on entry, so drain what you washed (beaten egg is fine as is)1.

Reading the oil: the ready window

Once the oil is in and swirled, watch it. Two cues mark the ready window:

  • Ready: the oil thins, flows quickly like water when you tilt the pan, and shimmers — and above it you can see faint vapor movement, the sign HowToCook gives for oil that is hot1.
  • Too far: the oil hazes into continuous, visible smoke. Back off the heat; you have overshot the window. Smoking oil is degrading oil, and it is one step before the genuinely dangerous stage.

Safety boundary, stated plainly: if oil in a pan ever catches fire, never pour water on it — water explodes the fire outward. Turn off the heat and cover the pan with its lid to starve the flame1. On a gas burner, the swirl-and-heat routine can flare; keep sleeves and towels back. None of this is likely in this course's dishes; all of it is worth knowing before the first time.

What the heat is for: the Maillard reaction

Browning is not "cooking harder" — it is a specific chemical event. When food surfaces get hot enough, their amino acids and sugars react to create new brown compounds (melanoidins) and with them the deep flavors of seared, fried, and roasted food. This is the Maillard reaction, and it proceeds rapidly only around 140–165 °C2.

That one number range explains both beginner failures at once. Water boils at 100 °C, so a crowded pan full of wet food cannot climb past ~100 °C until the moisture is gone — that is why timid heat and wet piles produce pale food: the surface never reaches the reaction. And well past the range, surfaces char while centers lag — that is the smoking-pan failure. Stir-frying is built exactly on this chemistry: a small amount of very hot oil, food kept moving, surfaces browning without any spot burning3.

Worked example (follow along)

Frying one egg with the full heat sequence, cue by cue:

  1. Dry pan on medium-high, empty. Wait about a minute. Why: hot pan first is the anti-stick half of 热锅凉油1.
  2. Add a spoon of cold oil, swirl to coat. Why: the cold oil heats against the pan in seconds while the coating fills the pan's fine texture.
  3. Watch, don't count. The oil thins, runs fast on a tilt, shimmers; faint vapor moves above it1. Why: this is the visual thermometer — dial numbers vary by stove, cues do not.
  4. Egg in, then leave it alone. Whites set from the edge inward; the underside laces brown. Why: browning is the Maillard reaction doing its work near 140–165 °C2; moving the egg early tears it before it releases.
  5. If smoke appears at any point, heat down. Why: smoke is the overshoot cue; the window is behind you.

The result is the diagnostic: browned lacy edge and easy release mean the window was right. Pale, oil-soaked, stuck egg: poured too early. Bitter brown-black egg: waited for smoke.

Your turn (faded example)

Yesterday's failure, explained with today's mechanism. A learner dumps a full board of just-washed, undrained vegetables into barely warmed oil, cooks on low "to be safe," and gets a pale, watery pile. Fill in the diagnosis:

  • The vegetables were wet, and surface water holds the food's temperature near ______ °C until it boils off.
  • The Maillard reaction needs roughly ______ °C, so browning ______ (did / did not) begin.
  • Two fixes for next time: ______ the vegetables before they hit the pan, and pour them in only when the oil ______.

Answer: near 100 °C; roughly 140–165 °C2, so browning did not begin — the pile stewed instead of searing; drain/dry the vegetables1, and pour when the oil flows fast, shimmers, and shows vapor movement1. The dial was never the problem.

Summary + what's next

Inventory: preheat dry, then cold oil in a hot pan; the ready window reads as fast flow, shimmer, and vapor movement, and steady smoke means overshoot; browning is the Maillard reaction near 140-165 °C, which is why wet food and timid heat produce pale results and why crowding a pan stalls it. Plus two safety rules that outrank all of it: no water into hot oil, and no water onto an oil fire — lid on, heat off.

The pan is handled. What goes missing next is flavor: the difference between food that tastes flat and food that tastes like itself is mostly salt, used on purpose — next lesson.

Run the heat sequence with no food at all: dry pan, medium-high, one spoon of oil, and narrate the cues out loud as they arrive — "flowing fast", "shimmering", "vapor moving". If it reaches steady smoke, note it, kill the heat, and let the pan cool. Then do it a second time and stop precisely inside the ready window.
