Lesson 04: Salt and seasoning in layers
Lesson objectives:
- State what salt is for: magnifying the food's own flavor, not making food taste salty.
- Start a dish from a measured salt baseline instead of a blind pinch, then adjust by tasting.
- Correct an over-salted or flat dish by mechanism, and reject the folk fixes that do nothing.
"Season to taste" — whose taste, and how much is that in grams?
Every recipe eventually shrugs and writes "season to taste," which is no help the first time: you have no taste memory for this dish, no sense of what a pinch weighs, and a live fear of ruining twenty minutes of work with one wrong move. So beginners do one of two things — skip salt entirely (the dish lands flat) or dump an unmeasured shake at the end (the dish lands salty). Both miss what salt is actually doing. This lesson replaces "to taste" with a number to start from, a loop to adjust with, and a way out when you overshoot.
Explanation
What salt does when it works
Seasoning means supplementing food to enhance its own flavor — that is the definition, and it carries the whole strategy1. Salt used well does not announce itself: it magnifies what is already there, making a tomato taste more like tomato. The professional test is blunt: "when seasonings are used properly, they cannot be tasted; their job is to heighten the flavors of the original ingredients"1. So the target is not "salty." The target is "tastes vividly like itself." If you can taste salt as its own note, you have gone past the target.
A baseline in grams, then a loop
"To taste" becomes workable when you split it in two: a measured starting point, then small corrections.
The baseline. Quantified recipes publish real numbers — the HowToCook tomato-and-egg recipe specifies 1.5–2 g of salt per serving, measured, not shaken2. Absent other information, a measured 1.5–2 g per serving is a defensible starting point for a savory stovetop dish. Weigh it once with a kitchen scale or measuring spoon (a level 1/4 teaspoon of fine salt is in the neighborhood of 1.5 g); after a few dishes your fingers learn what that quantity feels like.
The loop. Add the baseline during cooking, then taste; if flat, add a small fraction more, stir, taste again. Two rules make the loop safe: taste before every addition, and make each addition smaller than the last. Salt goes in; it does not come out. The loop only moves one direction, which is exactly why it starts from a measured floor and climbs in small steps.
One honest caveat belongs in the loop: saltiness concentrates as liquid cooks away. A sauce tasted correct at full volume will taste saltier after ten minutes of simmering, because the same salt now sits in less water. Season reducing liquids late, or taste again after the reduction.
When you overshoot: fixes that work and folklore that does not
Too salty is a concentration problem: too much salt per bite. Anything that truly fixes it changes that ratio — add more of the unsalted components (water or unsalted stock in a soup, more cooked-plain vegetables or grain in a stir-fry). Anything that does not change the ratio is folklore, however confidently your relatives repeat it.
Worked example (follow along)
Seasoning a two-serving tomato and egg stir-fry, decision by decision:
- Mise en place puts the salt in a pinch bowl: 3 g for two servings — the published per-serving baseline, measured while the stove is cold2. Why: measuring is a prep task; Lesson 01 says prep tasks happen before heat.
- A pinch of the salt goes into the beaten eggs. Why: eggs are one of the dish's two components; seasoning them directly means both layers of the final dish carry flavor, instead of salt riding only on the sauce.
- The rest goes in with the tomatoes as they soften. Why: salt in the simmering stage has time to draw juice out of the tomatoes and dissolve evenly1 — this is also the moment the recipe's sugar joins, to round the tomatoes' acidity3.
- Taste from the spoon before plating. Flat: a small fraction more, stir, taste again. Tastes vividly of tomato with no salt note: stop — that is the definition of done1.
- No additions without a taste first. The loop only climbs.
Your turn (faded example)
A pot of vegetable soup for four, blank by blank:
- Baseline: at 1.5–2 g per serving, start with roughly ______ g of salt, measured — not shaken from the jar.
- The soup will simmer down for twenty minutes, so the final taste-and-adjust pass happens ______ (before / after) the reduction, because saltiness ______ as water leaves.
- At the final taste you detect a distinct salty note. The working fix: ______. The folklore fix to skip: ______.
Answer: roughly 6–8 g for four servings2; adjust after the reduction, because saltiness concentrates as water leaves; the working fix is adding unsalted liquid or more unsalted ingredients (a bigger, correctly-salted batch), and the fix to skip is the raw potato, which changes nearly nothing about the salt-to-water ratio. If your instinct still said potato, reread the check block's feedback — the ratio is the entire game.
Summary + what's next
Inventory: salt's job is magnifying the food's own flavor, and "done" is vivid-but-not-salty; a measured 1.5-2 g per serving replaces the blind pinch as a floor; the taste-adjust loop climbs in shrinking steps and never adds without tasting; reduction concentrates salt; and over-salting is fixed by ratio (add unsalted volume), not by potato or sugar folklore.
Taste tells you when food is delicious. It cannot tell you when food is safe — chicken tastes done before it is, and color lies. The next lesson is the one where numbers stop being suggestions.
