Lesson 05: Doneness and food safety

Lesson objectives:

  • Judge doneness with internal temperature and reliable physical cues, and explain why color alone is not a safety test.
  • State the three temperatures that cover most home cooking: 74 °C for poultry, 71 °C for ground meat, 63 °C plus rest for whole cuts.
  • Keep food out of the 4-60 °C danger zone and account for carryover cooking when pulling food off the heat.

The chicken looks white all the way through — is it done, or does it just look done?

Everything so far — heat cues, browning, tasting — you judged with your senses, and your senses were enough. This is the lesson where that stops being true. A chicken thigh can look white and cooked while its center never reached a safe temperature; a browned surface says nothing about the middle. Official guidance is unambiguous: color and texture are not reliable indicators of safety1. For safety, the judge is a number in the center of the food. This lesson gives you the three numbers that cover most home cooking, the zone to keep food out of, and one physical effect that changes when you pull food off the heat.

Explanation

Doneness has two layers: preference and safety

Doneness is the gauge of how thoroughly cooked meat is — assessed by color, juiciness, and internal temperature1. Two different questions hide in it. "Do I like it at this point?" is preference: a steak cooked less stays juicier, and that choice is yours. "Is it safe to eat?" is not preference, and it is answered only by the center of the food reaching a specific temperature. The two questions separate cleanly with a food thermometer: probe the thickest part, away from bone, and read.

The number that answers the safety question has an official name: the safe minimum internal temperature — the center temperature a food must reach for the heat to have destroyed the pathogens it carries. It is a floor, not a target, and it differs by food for reasons the table's rows explain. Three of them cover most of a home kitchen:

Two of the rows explain themselves once you know why they differ. Poultry's 74 °C is the temperature that destroys Salmonella, the most heat-resistant pathogen of concern in raw poultry2. Ground meat runs hotter than whole cuts because grinding mixes surface bacteria all through the interior — the middle of a burger is "surface" bacteriologically1, while a whole steak's interior was sealed until you cut it.

Eggs, this course's terminal dish, are the gentle case: cook until whites and yolks reach the firmness you want — the tomato-egg recipe's "eggs set solid, faintly golden" cue3 is well past safe for a fresh, intact egg dish eaten immediately.

Carryover: food keeps cooking after the heat stops

A cut of meat pulled off the heat is not done changing: its interior keeps rising another 3–5 °C as heat from the outer layers travels inward1. This is carryover cooking, and it turns "pull it off exactly at the target" into an overshoot. The practical rule: pull whole cuts a few degrees shy of target and let the rest arrive during the required rest — the rest is not decoration, it is the last stage of cooking. (Thin, fast dishes like scrambled eggs have their own version: they firm up noticeably between pan and plate, which Lesson 06 uses on purpose.)

The danger zone: where waiting becomes the hazard

Cooking is not the only safety variable — so is sitting. Between roughly 4 and 60 °C, bacteria in food multiply rapidly; food-safety agencies call this band the danger zone, and the standing rule is that food left in it for more than two hours should not be eaten4. Growth is fastest in the middle of the band, roughly 21-47 °C4 — which is to say: room temperature is close to a bacterial optimum. The kitchen-shaped consequences:

  • Refrigerate leftovers promptly; the counter is the zone.
  • Thaw in the fridge, not on the counter overnight.
  • Keep raw meat's juices away from anything eaten uncooked — boards and knives that touched raw poultry get washed with soap before touching anything else.

Worked example (follow along)

Pan-frying a chicken breast, safety decisions annotated:

  1. Straight from fridge to prep — under two hours of counter time, always. Why: every counter minute is danger-zone minute4.
  2. Its board and knife go to the sink, washed with soap, before anything else is cut. Why: raw poultry juices carry the pathogens the cooking will kill — nothing else should meet them.
  3. Cook using Lesson 03's cues, then probe the thickest part: 68 °C. Looks white, smells done. It is not done: poultry's number is 74 °C2, and looks do not vote1.
  4. Two more minutes, probe again: 74 °C. Off the heat. Why: the number, not the color, ends the cooking.
  5. Leftovers into the fridge within the hour. Why: cooked food re-enters the danger zone as it cools on the counter4.

No thermometer yet? For this course's egg dish, the visible cues suffice3. For poultry and ground meat, the honest advice is that a probe thermometer costs less than one takeout meal and converts guessing into reading; until you own one, cut the thickest part open — no pink, juices clear — and accept that you are using a weaker test than the number.

Your turn (faded example)

Sunday meal prep, blank by blank. You roast a whole chicken and a beef roast, and the doorbell takes you away mid-afternoon:

  • The chicken comes out when its thickest part (not touching bone) reads ______ °C.
  • The beef roast targets 63 °C plus rest; carryover of 3–5 °C means pulling it at about ______ °C lets the rest finish the job.
  • Both sit forgotten on the 25 °C counter. The rule: after ______ hours in the danger zone, food should not be eaten.
  • Doorbell handled at ninety minutes: the food goes ______ immediately.

Answer: 74 °C2; about 58-60 °C (carryover carries it to the 63 °C target during the rest1); after two hours in the zone4; the food goes into the fridge immediately — ninety minutes is inside the window, and the window does not reset. If you wrote "reheat it and the clock restarts": growth already happened during the sit; reheating is not a time machine, which is exactly why the two-hour rule is phrased as a discard rule.

Summary + what's next

Inventory: doneness splits into preference and safety, and safety is a center-of-the-food number — 74 °C poultry, 71 °C ground, 63 °C plus rest for whole cuts; color is a cue, never the judge; carryover adds 3-5 °C after the heat stops; and between 4 and 60 °C the clock is running, with two hours as the hard stop.

Write down: your fridge's set temperature (check its dial or manual), your room's rough temperature, and the three places food most often sits in your routine (for example: counter thaw, lunchbox in a bag, leftovers cooling in the pot).
